Crust:
1 C unsalted butter cut into small pieces
2 C flour
1/2 tsp salt
Mix until crumbly and press into a 9×13 baking dish.
Bake 15 minutes @ 350°, cool completely
Cheesecake Layer
1 (8oz) cream cheese
1/2 C sugar
1 large egg at room temp
1 tsp vanilla
Beat together cream cheese and sugar. Add egg and until smooth
Pour over cooled crust
Streusel Topping
1 1/2 C flour
1 C confectioners sugar
3/4 C butter cut into pieces
1/4 tsp salt
1/3 C chopped pecans
Use pastry blender to cut the butter into the flour and sugar.
Add salt and pecans
2 C Friske’s Oma’s Apple Butter
Once the crust is cooled, spread cream cheese mixture over the crust leaving 1/4″ edge all around
Spread the apple butter over the cream cheese layer and sprinkle streusel topping over all
Bake 45 minutes, remove from oven
Cool completely, cover and refrigerate before cutting into squares
